What about pass/fail courses?

Pass/fail courses typically don't count toward GPA at all. They appear on your transcript but don't move the number up or down.

What's a 'freshman forgiveness' policy?

Some US schools let you retake a course and replace the lower grade in GPA computation. Check your school's academic catalog.
